What is the difference between 8" cook's knife in gray logo and the older model in red logo? Is the quality and specs the same?

The logo seems to have changed color (red to grey) as part of a 21st century marketing upgrade. Does it come with a sleeve or any protector?

No; my WUSTHOF 1040330120 Classic did not have a sleeve. It came in a cardboard and plastic box.

Where can I order a blade sleeve?

I bought 2 of them off Amazon after the Wusthoff web site told me that they were sold out. Only took 2 days to be delivered to my home.

what is the better stainless steel or carbon

According to web site monroeengineering.com: Stainless steel has a high chromium content which acts as a protective layer against corrosion and rust. Carbon steel is high in carbon that when exposed to moisture can corrode and rust quickly. Carbon Steel is stronger and more durable then stainless steel.
