Can I make any other types of cheese with this kit?

Absolutely! Mozzarella and ricotta are perfect for starting out, but you can use these same tools and ingredients to try your hand at queso fresco, chenna, Amish melting cheese, and more.

How long does it take to make a batch of cheese?

Traditional mozzarella takes at least 4–5 hours, between fermenting, setting, and stretching; however, our recipe included with this kit takes only 30 minutes with practice! Ricotta takes about an hour to prepare and will need to drain for 1–6 hours.

What's the difference between traditional ricotta and whole milk ricotta?

Ricotta is traditionally made with the leftover whey from making other cheeses (like mozzarella), along with vinegar, cheese salt, and sometimes milk. Whole milk ricotta, on the other hand, is made with milk, heavy cream, and citric acid.

Is there anything I can do with the leftover whey, besides make ricotta?

Don't just throw it out! Whey can be used as cooking liquid for potatoes, rice, grits, pasta and grains; as a starter culture for fermenting vegetables; as a nutrient boost in smoothies or drinks; to make whey cheese; or added to compost.
