Q: What is the dead space between the bottom of the fermenter and the ball valve? Do you still pull a lot of trub when transferring?

The port starts about two inches from the base, which leaves plenty of room to clear the trub. Most people don't have any problem when transferring. A few people have added racking arms or simple pickup tubes to get it to the exact level they prefer, which is usually a little lower than the port.

Q: Do you have temperature control?

No, there is no temp control. Do not purchase this fermenter. I had to return it as I could not get a seal on the spicket. Very frustrating!

Q: does the pot have a double bottom?

It does not have a double bottom. It is a fermenter, not intended for boiling, although it would work for that if you had your own plate beneath it to distribute the heat better.
