Tortillas Often Rescue Me
Like the author, we ALWAYS have tortillas -- small ones, big ones, flour ones, corn ones -- in our refrigerator. When the day is getting late and nothing else is prepared, it becomes taco night. What I love about Jessica's cookbook "Tortillas to the Rescue" is that it encompasses recipes for all of the usual reasons you would use tortillas but also takes you beyond the everyday ordinary taco or quesadilla. We loved the Shrimp and Black Bean Casserole recipe, and have thoughts to actually use it as a dip instead of a main course for our next party. All three of my boys (ages 4-12) asked for seconds and then even took some for school lunch the next day. We also had two thumbs up from the kids for Nutella Quesadillas, but they preferred them without the raspberry, or my favorite fig jam, added. We absolutely loved the Grilled Salmon Tostadas with Avocado Sauce, and I have that planned again for later in the week.We did try the Chili Dog wraps, and I think I'll stick to a regular bun next time. Tortillas do in a pinch, but we just prefer the bready bun to soak in more chili. And honestly, the buns with my brood are a little less messy.We're looking forward to trying out more recipes as well with the Green Chile Creamed Corn with Blue Corn Chip Topping next on our list.This cookbook is a great resource for quick and easy recipes to use with a kitchen staple, or at least a staple in my house. The same author also has a cookbook using Quinoa, which I can't wait to get. Yum yum
This is a well written little book with lots of good, wholesome ideas for meals built around the tortilla. Its a great gift for friends on a budget or in a hurry, with lots of tasty, quick meals.

Tortilla Cook Books
There are better Mexican cook books out there. Easy to follow recipes but the more complicated recipes taste better. I expected more in a cookbook.

Great little book with some novel recipes
If you are experimenting with cooking more Mexican meals, this book is definitely for you..simple and unconventional along with some traditional fare as well..

Full of tortilla inspiration!
Tortillas to the Rescue is a well but together guide to help you incorporate the tortilla into your family's meals even if they aren't fans of traditional Mexican recipes. Ms. Harlan introduces readers to a ton of unique ways to use what seems to be such a plain little bread product. If you aren't familiar with tortillas, the book has a nice introduction to discuss the background, nutrition and storage of tortillas. The book also has several ideas on how to warm up a tortilla. I always just wrap in foil and throw in the oven but I think I am going to try grilling them next time.The cookbook is divided into meal type so you have basic categories like breakfast, starters, and snacks but there are also a couple of unique chapters I would not have considered. There is a soup section where the author teaches you how to make tortilla strips to put on top of your soup and a whole chapter dedicated to meatless main dishes. Since I am trying to find some unique vegetarian meals this was a big hit with me. The other chapter that I was really drawn to was the desert chapter. I have never considered using tortilla as a desert ingredient but they sound simple and incredibly tasty!There is a nice balance of recipes in this cookbook. Some have a traditional Mexican flair to them but others (like the hamburger wraps, yum!) are classic American with a twist. Some have a few more ingredients than others but they are all pretty simple and straightforward. If I could change anything about this cookbook it would be to add pictures. I always prefer cookbooks with pictures so I know what my recipe should look like! Overall, though, I loved this cookbook and will be stocking up on tortillas now that I have been inspired!Disclaimer: I was provided one copy of this cookbook at no charge to facilitate my review however all opinions are my own.

More things to do with a tortilla than you can imagine
I enjoyed reading this book and liked a number of the recipes. The book begins by talking about the different types of tortillas and even their nutrient values and how to store them. It didn't give the glycemic index or load, however. I found this most helpful. Also, it gives the history of the tortilla.Most of the recipes are simple and don't require lots of ingredients. What I didn't like, however, was that it doesn't give the calories per serving or any of the micro-nutrient values of the recipes. In today's health conscious world, this is important. And, to be sure, some of the ingredients are not what a lot of diet conscious folks would want.The book contains recipes for every meal plus dessert. I found it unique and very useful. My only complaint is that it didn't provide the calories and other nutrient values for the recipes.Recommended.-- Susanna K. Hutcheson
