I have the 17.5cm santoku that is the bigger brother of this one.I bought the knife elsewhere.It is a rocking santoku, not a mostly flat edge, like the traditional ones.Perfectly balanced at the middle of the bolster, comfortable pinch grip. perfect blade geometry for smooth cuts in potatoes, carrots, actually cutting not splitting them.Very impressed with the performance.I don't know how long it will keep its sharpness but I don't really care. as I enjoy sharpening my knives.Knives are like pencils. They all need sharpening.
