Sorry to ask this, but can you grind coffee and spices? I prefer to have just one appliance if possible?

I used a coffee grinder for herbs...clean it by putting a piece of bread in there and pulsing... put the ground now seasoned bread crumbs into a container to top casseroles etc... use a seaparate grinder for the coffee...

Can you slice without using the shooter (meaning, the sliced vegetables will just fall into the bowl)?

The slicing blade will only fit on top of the disk attachment that blocks the processor container and pushes the slices out through the shooter. You can still discharge the slices into a bowl or container. The processor container is pretty small and wouldn't hold a lot of cucumber Or similar sized slices. But you can shoot the slices into any size bowl or container and you're good. The processor container is good for small batches of stuff like sauces, pesto and stuff like that.

Does the end of the shooter spout come off for easy cleaning? It looks like a separate piece of plastic with tabs, but I don't want to force it.

It looks like it should but I'm afraid I'll break it if I tried. Other than that, this is by far the best food processor I've ever had. Literally in seconds I can chop up a whole hard boiled egg. The blades get every part of container.
