This Dandelion Honey (Miele di Tarassaco in Italian) is produced in May in the very heart of the Val di Non where innumerable apple trees bloom on a yellow carpet of dandelions. Mieli Thun sees this as their 'family' honey. Normally amber-yellow, it may turn an intense cream color when crystallized. It is pungent, with the sharpness almost of ammonia, and its taste is long and medium sweet, with great freshness and hints of camomile and white pepper. Crystallizes very quickly into medium or fine grains.
