I have the old hickory 7 inch butcher knife I however prefer a smaller blade. So would this one or the 5 inch hunter be better for bushcraft and outd?

This is like a Baby Butcher knife. Handy as heck. Love mine. It is carbon steel so will color. Holds and edge and easy to sharpen. Get you one and enjoy it.
