Q: are there really 6 pans?

No, not 6 items. I only received 1 (one) plastic Cambro container (pan) which is high quality, and great for a "Sous vide" ribs container (perfect size, 5 full rib racks).

Q: If mounting a anova sous vide precision cooker, whats the height difference?

I'm not 100% sure what your question is asking, but you're going to want the 8" deep version, as the 6" is not really deep enough. With this one, my Anova Pro and regular Anova almost touch the bottom.

Q: Are the diminsions shown for the top or bottom of the container?

I believe they are for the top. I took a quick measurement of the top of mine and it was 12 and 3/4 ×20 and just a shy over 3/4. The pan fits nicely in the cambro hotboxes and is a nice size for sous vide use.

Q: How many Gallons of water will this hold?

The holding capacity of this unit is 6.75 gallons.
