Q: are the bottoms flat with no ridges, for use on glass top stove?

Yes they are flat. I have a glass topped stove and the pans work well.

Q: Do the pens work on induction cooktop

Yes, but I have to turn the heat way higher than normal. 6 or 6.5 is medium normally on my cooktop. When I use these pans 8 is medium. They are nice pans.

Q: What type of non-stick is this? pfos and pfoa? etc, or ceramic? i dont want the convenience of non-stick over getting cancer etc.

Not a clue ,but nothing sticks they work great

Q: Do the handles get hot while cooking, enough to need a towel or handle cover?

No issues of handles getting hot while cooking on the stove top....o'course yes when cooking in the oven. Love these pans!!! We have follow instructions with not using any kind Pam or aerosol sprays. Clean up great in dish washer too.
