Every professional chef needs to read this
This is the most inspiring biography i have ever read. Chefs of the past two generations know not the hardships of Escoffier. We worry about servers, owners, long hours... Escoffier deals with things like hotel fires (and still does the dinner), feeding armies with dead horses, and still managed to revolutionized not only food but the way we dine a la carte. Wow.

I really am enjoying "Escoffier; The King of Chefs" I like the way the book is broken up into his life story and educational points it makes the book more interesting an valuable as a culinary student I highly recommend it.
