will it sharpen like 28- 25 inch swords

It is challenging to hold while doing longer knives... your fingers are subject to being hit by the blade as you draw it through the sharpener. I would say that if you could secure the sword in a small vise or secure the sharpener it would probably work

What is the bevel angle?

I don't know ,but they work great for me. I have more than 1. I hope this helps you.

Will this work on a smaller pocket knife (Benchmade)? I read that their 4 in 1 doesn't have enough clearance to get the blade fully sharpened.

I find the sharpener works best when you place the blade over the edge of a solid surface , blade side up, and pull the sharpener downward from the back of the blade to the tip.

I don't use this, so I asked my husband. He likes this style because it is fast and easy for a quick edge on the knife. The blade is moved across the sharpener straight so the angle would be what is seen in the picture. I hope this helps.
