Will this be sturdy enough for a Winwing Orion 2 Hotas?

It holds my X-56 throttle and stick easily, and that's a pretty heavy set up

What is the minimum desk thickness required for these? Also, are they suitable for tempered glass tops?

On mine, it is adjustable so your table desk could be thin and you can move it up or down if your tabletop is very thick plus you have an adjustable screw as well that grips the table, I love them, and was a good purchase for me.

Can you adjust the height?

Yes it is adjustable; as a quick rough measurement it can be set from 50-300 mm below desktop height.
