Nice sharp, pairing knife
This is a super sharp little paring knife. I use it to peel tough artichoke stems, orange zest, and for sectioning citrus. The knife is very comfortable to use and easily slices through small fruits and vegetables that you hold in your hand as opposed to cutting on a board. If you are not used to sharp knives, be aware that you must be careful when using this, since the correct way to hold it, is with the blade pointing towards yourself. I have peeled a tomato skin off with this knife, though I find that the bird's beak style is easier for me to use for peeling. I have a nice Wustof Classic for that, but if it ever became damaged, I'd most likely replace it with a Shun.For the times you will need a surface to cut on, only use wood, bamboo, or plastic cutting boards. Never cut on a plate or directly on your counter. Hand wash with warm, soapy water, and dry throughly (I use a paper towel) before storing in it's block or magnetic holder. Hone your Shun knives once a week, have Shun sharpen them once a year, and they should last for a long time.
