Is sorghum really millet?

The two plants are not related except that both are grasses. Sorghum is closely related to maize (corn) but originated in Africa. Millet originated in Asia. Millet is goitrogenic (causes problems with thyroid) and sorghum is not. Sorghum has more natural sugars than millet.

Is this flour less starch not to break down in as much sugar

Sorghum has complex carbs. They break down more slowly in the body. Also, the starch in sorghum is at least in part, resistant starch. This is a good starch that feeds your friendly gut bacteria. So, in short, Sorghum does partially break down into sugar, but more slowly, and not entirely. The part that doesn't break down feeds your good gut bacteria, allowing your whole body to function more heathily.
