Hi, i run a small business and am looking for something to roll out my pot pie dough (pie crust) easier. we do 200 at a time. is it well built?

We use this sheeter to roll out laminated dough and it works really well for us. Obviously all mechanical use, but it is holding up well to our pressure. We don't roll huge amounts of dough every time we roll, so I don't know how it will work for really large amounts of dough.

The plastic gear on my machine has broken - can I buy this part somewhere?

Have not made croissants. I have made dinner rolls, pizza, and bear claws. I had some failures with danish, but that was because I didn't understand the process. -Dave
