Fantastic book
It’s a great book with some lovely recipes. I’ve made the pie, along with the Italian bean and lentil stew and I’ve thoroughly enjoyed both. They are mostly quick and easy but there’s a great chapter for cooking for friends. Really impressed

Fantastic recipe book
Leon Happy One Pot Vegetarian is excellent and one of my most used recipe books; I have used it for every evening meal for the last three weeks and each recipe has been superb. My kitchen has been out of action for a few weeks and this book has really renewed my love for cooking whilst helpfully using fewer pans. The dishes feel restaurant quality and have a real depth of flavour - the chickpea kofta, baked hummus, green bean and beetroot curry and tikka tofu were particularly delicious. The red wine risotto is absolutely brilliant (and tbh risotto is normally an uninspiring, I-need-to-go-shopping meal) and this has really transformed how much I enjoy this dish. I’m looking forward to the pale ale and mushroom toad in the hole tomorrow. As a lifelong vegetarian and keen cook, I would absolutely recommend this book.

Great Creative Recipes
I purchased this book looking for new recipe ideas as a vegetarian who had fallen into a complete rut with my cooking.I love the layout of this book and clear step by step instructions. The recipes I've tried to date have been success with the goats cheese Tart in particular being a hit with family and friends.Though easy to follow the recipes have multiple ingredients and for must of us aren't going to become regular midweek meals in a busy household. They provide great ideas for special occasions and hosting though and would 100% recommend for those looking for new ideas and to refind their love for cooking
