This spice/herb is a root, just like ginger, turmeric, and galangal. It is a must-have ingredient for some Indonesian dishes such as Telur Petis (Egg Curry with Shrimp Paste) or Jangan Bening (Spinach Soup). I have had no luck finding this root in any Asian grocery stores in New York, so I was quite excited to see it available on Amazon. This root is used to impart flavor and aroma and is not not supposed to be eaten, so you have to fish it out of the finished dishes. The pieces in this package are rather small, but it is still manageable to find. Alternatively, you can put the root pieces in a spice cloth/bundle so it is easier to find and remove from the finished dish.
