Do you have to keep using one hand to have water running? Or on the way back you can actually wash both hands?

You have to use one hand to have water running. You can't wash by flow both hands togheter.

Will this take 10mm hose pipe as i already have some or must it be 12mm?

Does the spout turn/twist once the tap is mounted?

Yes it turns very easily. I fitted it onto wood along side my sink and it moves easily.

can it be mounted in hole in handbasin, rather than to worksurface?

I dont see why not. We have ours mounted to a hole in a water container lid and it works fine
