Can I take the light sensor off and activate the servo with an remote from an RC plane?

The photo cell can be remove. But by the time you put the hardware from the rc plane to receive the remote single you will have added much more weight and have lessened you drones lift capacity. And the receiver for the remote rc plane will need the be shielded so as not to interfere with the gps and compass of the drone.

I ordered this thinking it would work for dji phantom 3 pro and just saw where it says for dji 4 advanced and pro. will it also work on the 3 pro?

I have one, it uses a fiber optic wire to connect to one of the front lights on the drone to trigger the release. If the Phantom 3 has lights that you can turn on and off by your controller then it will work fine.
