What is the blade length ?

The 8 inches refers to the actual blade length. I assume you're purchasing this knife to fillet large fish. I found the 5-inch blade length is more suitable for filleting silver salmon in Alaska (we cleaned over 50 last trip). The longer blade is O.K. if you are cutting through the back and belly in one stroke, but it's not the best technique. Refer to multiple online videos showing fillet methods. Most fish mongers are using a shorter blade. The 8-inch blade is also rather flexible if that makes any difference.

What's the best way to sharpen this knife?

Since it's not serrated, it's pretty easy to sharpen with any sharpening method you prefer. For a quick, sharp edge we recommend a double sided whetstone such as a 200/400 grit stone, and to use it wet and on a flat surface.
