If you don't like Al'dente pasta, do not buy
I've struggled for years on Keto to find a suitable replacement for pasta that didn't take forever to prepare. I happened upon this brand recently and gave it a try. It is as close to traditional pasta I think you can get without it actually being pasta lol. It has a slight wheat pasta texture but not the flavor. Has little to no flavor which is a huge bonus for me. Like the box says however, this is NOT regular pasta and will not get as soft as normal pasta can with boiling. This pasta comes out al 'dente, still a tiny bit firm or chewy. That is the only "con" I have for this brand. But as someone that enjoys al 'dente normally, I found this pasta delicious and perfect for my low sugar pasta sauces I use. It's a little expensive, but that's the convenience of it. :)

Just don't.
I had really, REALLY high hopes for these. They don't taste bad—they don't taste much like anything, but they never get to a 'soft' consistency ever. Boiled for 15 minutes... still like eating a stick. Can't twist them on the fork because they aren't pliable enough. They're chewy... just no. If they got soft enough to actually eat without having to cut them up and eat with a spoon, they'd be better, but still way overpriced. I paid $36 for 1.5 pounds of noodles. What the hell?? My fault, I know—clearly says 8 oz box, and it's my fault for not noticing, but seriously? $36. Nope, just not worth it. I just wish I could return them.

Maybe I need to cook it longer
The package says 6 minutes for Al dente. I tried 7.5 minutes. Still pretty stiff and tasting a little like bread but good support for heavy meat sauce! Grateful for the product!

Most like real pasta of all the keto friendly pastas
Wow! This pasta exceeds my expectations! I’ve tried many keto/low carb pastas over the past 9 years of being on keto, but this one has the texture down of real spaghetti. I’ve been waiting for someone to create a good pasta and I think I’ve found it! And zero net carbs? I tried it for the first time this evening. My dinner was delicious. Yes it takes longer to cook, but after reading the reviews, I tried a trick that I used on other keto pastas thinking it would help with soften the noodles: I added a tablespoon of baking soda to the water, in addition to salt like one would normally do (rinse well when cooked). I found the texture great, perfect al dente. Course, I really like al dente. I haven’t tried it without the baking-soda-softening-method since I tried it for the first time tonight. The pasta is pricey, but to me it’s worth it. I’d like to try the other pasta shapes. Having said that, I don’t know how it affects blood glucose, but I normally don’t check that. I don’t know if it kicks a person out of ketosis.

Honest Review
As a Type 2 Diabetic I was looking forward to eating pasta again. I really wanted to like this pasta! Unfortunately it is not very good. I realize it’s not going to be exactly like normal pasta - but this is nothing like pasta at all. It is tough & grainy, the flavor taste like dust, and it doesn’t hold sauce at all.I had read that cooking times needed to be at least doubled - so I cooked it for 18 minutes. Even doubling the cook time results is spaghetti that is still very stiff. Not like al dente stiff - think more like a bundle of zip ties stiff. It won’t twirl around your fork at all. It bends, but it won’t twirl.The texture is very grainy. It’s closer to dry oatmeal in texture than pasta. It doesn’t chew right.The taste is odd. Odd enough that it pushes through the flavor of a green pepper & mushroom sauce. And for what ever reason sauce does not stick to this pasta. You have to try to scrap sauce up with the fork while you’re eating it to get any sauce.And finally - I found this very odd as well - it did not hold heat. I’m a fast eater, and this stuff got cold very quickly.I do NOT recommend! I’m going to ask Amazon for a refund - if they refuse I’ll trash it. I’d rather not eat pasta than eat this garbage ever again!

Mixed review...Yes and No
I had really high hopes for this product, but I was a bit disappointed. The biggest fail for me was the inaccurate cooking time. The box says to cook for 6-10 minutes for al dente. This is completely false. The first time I cooked these, I cooked them for 10 minutes in boiling water and they were hard. They barely bent. I certainly could not twirl them around a fork. I began cooking them for longer. Through trial and error, I eventually reached 30 minutes for them to resemble a somewhat al dente consistency. I still need to cut them with a fork when I eat rather than twirl. The flavor is not bad and will suffice for those looking for a no carb alternative. After eating this pasta, I do not feel lethargic - so that is good! Just need to keep the cooking time in mind when purchasing this product. Bad on the manufacturer for advertising erroneous cooking times. Clearly, their test kitchen did not do their job.

A Bit TOO Al Dente for me
I boiled this Pete's Pasta Zero Carb spaghetti for 15 minutes as it was still to 'hard' at 10 minutes. Even then it was kind of tough and chewier than what I like. So, I transferred it to a baking dish and smothered it with my Aribatta sauce and baked it for 40 minutes. I also added a little water hoping it would absorb it and become more tender (the pasta, not the sauce). Well, after 15 minutes of boiling, plus 40 minutes baking, I have a great casserole, but the pasta is still way more al dente than I like.It is ok in a pinch, but honestly, it does not quite satisfy that craving for spaghetti noodles and pasta. I will use this up, but I will not buy it again.
