What are the motherboard specs to shop for on this? what is an "apu" compared to a cpu?

Since the seller here seems misinformed, I'll abswer this: ANY CPU works with an onboard video chipset. That's the point of onboard video chipsets. An APU works on boards that don't HAVE on-board graphics, which is nearly every motherboard. They're correct in saying that a dedicated video card isn't needed, though (but you can still use one).

An APU has a built in GPU (the part of the graphics card that does the processing), which lets it take the place of a graphics card. APUs have lower power and performance, but for casual gamers and for normal people who don't game or do multimedia work (video editing, etc), that's perfectly fine.

As for motherboards, you specifically want one with a B350 or an X370 chipset, which are the two chipsets AM4 boards use right now. Since the 2400g isn't compatible with every board from the start (the boards need to be upgraded), you should aim for an X370. That being said, if probably matter which to the end computer, just to save you time during the build. Either ine would be compatible after upgrading its BIOS (the board will generally tell you how)

It will run Ark just fine.  Get good fast RAM to go with it, as the RAM speed makes a big difference with this processor.

Can you pair this with a graphics card for even more power?

Not sure what you really mean by "even more power".  The iGPU won't do anything if you use an external graphics card.  If you plan on getting this APU and a graphics card you are basically wasting money over buying a Ryzen 3 1300X for $40 less.
