Not for pancakes, but could be ideal for meats
Excellent quality. It's a bit rounded at the base, so not ideal for pancakes. Oils runs to the sides, with the convexed center. Not perfect for getting eggs neither, as the oil runs to the sides. I would much prefer if it has a flat bottom. It works well with fish, flat bread, and some more substancial Foods rather than thin pancakes. I don't eat meat or chicken, hence haven't tried these, but it that is on your menus, I reckon the soft convexity would be perfect for releasing some of the fat to the sides while pan-frying the meat at the center.

Excellent pan
It is a great pan not only cooking crepes and pancakes, but it works brilliantly to cook meat and sautรฉ vegetables. At the beginning, I was a bit worried about seasoning the pan, but followed the instructions on YouTube and managed to do it successfully. It cooks food in no time, the only difficulty is that you have to do hand wash without detergent only with hot water and immediately dry it with a kitchen towel. I always wipe it with a bit oil after drying. So far it is brilliant. I am so pleased that I bought it.

Excellent omelettes.
This pan really feels top quality. My omelettes are turning out perfect. Make sure you season it well when you first receive it. I was going to give it 5 stars but I decided on 4 because it's very heavy. If you like to flip pancakes don't bother trying with this pan. Then again the weight makes it feel quality.

Excellent
I have an induction stove with a ring that should be 21cm but clearly is smaller than that... This pan is excellent even in my stove. We use it for homemade crepes and galettes, pancakes, french toast, etc. It is really good and has seasoned beautifully despite our stove - just did the smoking of some oil as instructed, no oven seasoning.

The best crepes ever!!!
A little bit lighter than mineral b series, this pan is a great choice for who want the ultimate perfect crepe. Just season it in oven -250C until it smokes all off (not follow the de buyer instructions) and you get a perfect crepe on the first try!

Very heavy but works
Far much better than the cheaper little De Buyer Crepe pan I bought before. This one is dicker and wonโt let me down so easily, I can finally make Galettes with it. Too heavy for my wife though.

It's the De Buyer Carbones Plus , 2.5mm thick
Seems some things were lost in translation, this pan (18cm and 24cm) are actually the De Buyer Carbones Plus , so it's 2.5mm thick which is great. This makes it the same thickness as the Mineral B crepe pan, but you aren't paying the price for the bees wax. Carbone Plus is targetted at restaurant trade, hence no bees wax and much cheaper. The Mineral B is more for the retail trade hence little bee in the handle as attention grabber and less likely to rust with bees wax coating while on a shelf in a shop or being handled by customers, etc but they are the same thickness, so you can save some money and get this version. I season my crepe pans with clarified butter because butter is also in my batter, crepes and pancakes don't stick and you don't need to oil pan between crepes.

best crepe pan on the market ....makes restaurant and street vendor quality crepes once you practice
Living in Australia can sometimes make it hard to get things locally, thanks to Amazon some items ship globally , so French pans via Amazon UK is how I got these. I have the De Buyer Force Blue pan also, which is thinner and so can be off balance in small size due to weight of the handle but was available locally. The De Buyer White Steel is actually from their Carbon Plus series , so it's 2.5mm thick, so no hot spots, no off balance due top handle weight as the base is nice and heavy. Seems something was lost in translation and they forgot to put Carbone in the title. I bought 2 off the 18cm and 2 off the 24 cm Carbone , so that I can cook 2 crepes at a time. Although called a crepe pan, I also use them for making the "thick style" American style pancakes as they are a great fit. I season my crepe pans with clarified butter (ghee), works great and I use butter in pancakes. No crepes or pancakes have stuck (made about 120 so far), I also add a little butter to the batter like the French chefs do and don't oil pan between crepes or pancakes . You can also make layer cakes out of crepes so you can get plenty of use from it (use 24 cm for layer cakes, 18cm makes small cakes). I would highly recommend this pan, and it is the thickest crepe pan you can buy, most others are only 2mm, this one is 2.5mm.
