The average weight is approximately 8 pounds but varies based on the size of the cattle.

The beef brisket arrived in a foam box with a small amount of dry ice inside to preserve the frozen condition. I simply removed the beef and slipped into my own freezer until I wanted to defrost for use. The beef is packed in a vac plastic wrap and then in a huge foil bag I presume as supplemental insulation. Defrosting will take 2 + days in fridge so plan ahead. I bought a 13# brisket and sought and received a great recipe from the Nebraska Beef Trade Association.

So weight will vary? Does it come trimmed and ready to be smoked?

Weight varies - we ordered two and they were not exactly the same weight. They were trimmed and ready to smoke. Best brisket we ever smoked!

What is its "shelf life"... i.e. how long can it be refrigerated before it should be cooked?

If left in the package and unopened, about 3 to 4 days but that also depends on how cold you keep your refrigerator, the colder the better. It is ideal to cook, smoke, or grill the same day the product is thawed. Always inspect every piece of meat you buy for bad odors and signs it may be spoiled regardless of where you buy it.
