Gluten-free and Excellent!
Excellent choice for gluten-free noodles. There are no good GF egg noodles out there- we've tried them all. These aren't egg noodles, but as close as we've found. They are delicious in soup! If you're gluten-free, try these, as well as their Traditional Pho Rice noodles and Thai Kitchen thin Rics Noodlex (like ramen).

Texture is awful
I've been making these type of rice noodles for years and have used many different brands, some organic. The texture is supposed to be quite firm after soaking in hot water for a few minutes. They are supposed to be very al dente because they go into hot soups or stir fries. These noodles have the worst texture I've ever seen. They are gooey, gummy and completely stick together. There's nothing you can do even if you soak them in cold water. They also crumble and fall apart. Sorry excuse for rice noodles.

You have to get the water to boil on high. Pour a tbsp or 2 of oil. I used toasted sesame oil from trader Joe's. It's the best. Put in the noodles and turn down to medium. Stir it like... a lot. Or the noodles will stick together. You'll prolly mess up the first time cuz you gotta learn the noodles. From the time you put the noodles in the water to the time you take them out is about 7 minutes. Turn the heat OFF after 7 minutes. If they're not done, leave them in the water with the heat OFF and keep checking them every 30 seconds.

Chewy. Not as I expected. Really want a noodle that’s similar to Ramen. This is not.
