Not spaghetti, but tasty
I am not a vegan, or on a gluten-free diet, but I try to eat healthy foods and I'm a huge fan of veggies of all sorts, so I ordered this (rather pricey, compared to pasta) Hearts of Palm Spaghetti (6-Pack) by Food for the Sol. It was my first experience eating hearts of palm faux pasta, after being somewhat disappointed by commercially-available lupin pasta and other low-carb options, and rather pleased with shirataki noodles.I drained and rinsed the pasta, and sampled a noodle, which still seemed salty to me, so I sort of improvised on some online suggestions and soaked the noodles in boiling water while I prepared my veggies. I lightly sauteed the "spaghetti" with a concoction of butter, garlic, onion, tomato, pepper, and chicken, and a lemon, parmesan, and feta sauce, much like a light dish I actually make with spaghetti. The result was...different. The flavors worked well together, although the pasta was still more crunchy (think water chestnut) than I'd like, and did have a very distinctive taste that did not at all mimic actual pasta. I also noticed immediately that, unlike pasta, it didn't fill me up even after two helpings (and it's rare I can even eat two helpings). I wasn't especially hungry afterwards, and I didn't feel bloated and stuffed, but I also didn't really feel like I'd eaten much of anything. That could be good or bad, depending on your perspective.I'm frustrated by all the "pasta alternatives" out there (zoodles, cauliflower "rice," etc.) because, frankly, I love vegetables. Each alternative is a veggie worth eating on its own, and it irritates me to see them used as inferior substitutes for pasta, which is something entirely different in texture, flavor, and application. This particular hearts of palm spaghetti is NOT spaghetti, and won't ever fool anyone enough to satisfy a pasta craving. However, my initial experience did introduce me to a new flavor and vegetable option, that I think I will highlight in the future for itself rather than pretending it is pasta. I think this might be wonderful worked into a stir fry, or even a frittata or soup.

Something to feel good about
It was easy to prepare and has a nice taste and texture to it that made it very enjoyable. The low carb content makes me feel good about reaching my diet goals while still having fulfilling meals.

Is it a good alternative - - NOPE!
I bought this as I am trying to become a vegetarian so this was intriguing to me. It was HORRIBLE!What a clumpy mess. I followed instructions however it was uneatable and I would NEVER recommend this product!

Not like Pasta
If you are looking for a good vegetable dish - This will take on the flavor of what it is cooked in. If you are expecting this to be like pasta. You can get very similar zucchini noodles, fresh at your supermarket for a fraction of the cost.

Love it!
We love Heart of Palm noodles and various products. This pack I made into a stir-fried Char Siu dish with the noodles. It was awesome. I always rinse these types of noodles, sometimes the liquid smells a bit. These didn't seem to smell. I just stir-fried them until the level of doneness and then added my home-cooked char siu, some scrambled egg, and Asian sauces (I used Nasi Goreng and fried rice seasoning). It was lovely.There are 3 x 8 oz packets. The plastic packets are very thick and heavy-duty and not easily broken. Great noodles and I would buy them again. The price of $16.99 is a little high for 3 x 8z packs compared to other brands... at $5.66 a pack.But for a meal with at least 6-8 servings, with my additions, it is great value.

Solid Faux-Pasta Alternative
I am not vegetarian or vegan, but I do enjoy alternatives to traditional meat-based foods from time to time. I have tried a few vegan spaghetti alternatives and never found anything that really worked. I'm not sure this one did either, but if I couldn't have the real thing this would probably be a solid stand-in.When you open the package, you have three packages of the hearts of palm spaghetti noodles. They are in a small amount of water, likely coming from the fact that these are literally plant-based and therefore hold some water. The texture is a bit like spaghetti squash where you can see the "grained" of the plant fibers constructing the strands. If you are looking for something with that consistency of spaghetti, this will probably not meet that need. However, compared to something like a spaghetti squash, which is a bit of work and takes some time to get right, this is much better.Taste-wise, I like this FAR more than other veggie alternatives to noodles. Zucchini noodles and spaghetti squash all seem to retain a lot of "squash taste" that comes through whatever marinara you're using. These noodles don't have any of that and instead absorb a lot of flavor from whatever you cook it with. I just threw in some butter, Italian seasoning, and a little onion and garlic powder and it tasted pretty good. Even as someone who LOVES traditional noodles, these definitely will work in a pinch. Because it is made of that fibrous plant material, it almost has a taste akin to al dente noodles (which a slight "bite"). I mean.... they clearly aren't, but it gives you some of the same mouth-texture. That's something you don't get with other plant-based noodles.The biggest advantage to these is speed. No roasting a spaghetti squash or spiralizing zucchini. Just open the package, drain, and heat. Done. I believe I got through cooking a pan of noodles (enough for two if my wife wanted them) in about 5 or 6 minutes.Final Rating: I think I'm just too in love with traditional noodles, but I can't fault that on this product. This one got me closer than anything to trying plant-based noodles and I'll actually look forward to when I can open the other two packages. I can't fault the product for my personal tastes, so for delivering on a solid plant-based alternative to noodles.... 5 stars!
