An amazing book! If you’re wanting to dial up your skills a few notches or ten this is your new bible. Wow! Things I never knew were possible with visual instructions. It’s a lot to take in but worth the money for this treasure.

this is from the best chef ever !!....it's for intermediate/advanced would be French chefs !!so far everything i have tried is wonderful....oh, this was a used book (so great price) andwas in wonderful condition !!!....a real treasure for your kitchen....

A Classic
Paul Bocuse is one of the best chefs in the World, one that has inspired many of the current superstars we see on TV. I bought this book for the first time many years ago and learned a lot from it. The recipes are dead on and explained the way a novice cook can follow, yet are also valuable to the most demanding and experienced gourmet. Since I lost it a while back, I am very glad to add it again to my cookbook collection.

Classic chef's take on classic french recipes. Everything I've tried has been wonderful. I would love more pictures but it's an old-school book and that shouldn't be expected.

Enjoying this book
I'm enjoying this book and learning many new ways of working with ingredients. After making a few recipes I began reading the forward and intro (which I generally skip in most books, especially cookbooks). I found the information to be very helpful and worth looking over.

A great gift for a friend in cooking school
I bought this for a friend in cooking school, after seeing the Anthony Bourdaine show which featured Chef Bocuse in Lyon on CNN. He really enjoyed the book and I hope to taste a sampling of my friend's work from this book at some time in the future.

American version of The New Cuisine
The book is fine but it is just the American version of 'The New Cuisine', not an entirely different book like I though. So if you want everything in cups/oz/lbs then that is fine. In the UK though, go with the version I mentioned.

just the lobster sauce américaine is worth the buy. He's in his prime in this book.
