Are you supposed to let the latch close and lock shut? I thought it said not to allow it and I accidentally did and had to force it open mid-cook.

Do not use the latch during cooking.. as expansion happens during cooking it can break it!

When you clean it can you pop out the tray?

No. Does not pop out. Cleans si easily with soft cloth, soap and water.

Can you add butter and syrup directly into the waffle maker? I always keep mine in the refrigerator so they don't melt well.

I wouldn't melt it in there. I usually melt my butter in microwave, then pour it over the chaffles. You have to grease it anyway, you can try it. But my thoughts is it may be more difficult to clean.
