The plant itself is not difficult to grow, and the leaves, taken from the plant without any treatment, are incredibly sweet. Coco Polo Ingredients Coco Polo Reb A sweetener is a pure extract of the Stevia plant and is Non-GMO. Their Erythritol is a naturally fermented, fully absorbed, zero glycemic, non-insulin raising sweetener sourced from Non-GMO corn. (Not all Erythritol is Non-GMO). Since it is fully absorbed, it does not cause digestive problems as with other polyols, Maltitol, Xylitol and Sorbitol. In addition, since it is not very sweet and they also do not use it in sufficient quantity for it to lend an “adequate sweetness” to the chocolate, Stevia is used to give the chocolate its “sweetness”. Coco Polo has no laxating or digestive problems as with all previous sugar free chocolates. No Sugar problem reactions. Coco Polo's Inulin is a prebiotic from chicory. Almost all fiber in the chocolate bars is derived from the high levels of cocoa mass (chocolate liquor) and Inulin. All bars are properly labeled according to FDA approved standards. About Coco Polo Following a chance meeting at the 1999 Natural Products Show with Bill Francis, a stevia farmer from Hawaii, Diane Yamate and John Cunnell met with him on his farm on Oahu. Bill had developed a patented method of extracting Reb A (Rebaudioside A), the component of the Stevia plant that would be finally approved for use in food in the U.S. in 2008. He believed that his Stevia extract with its safety combined with natural clean taste and health characteristics was the best of all sweeteners for all foods. He asked Diane and John to make chocolate with his Stevia. While waiting for the FDA's approval, not realizing that it would take almost 10 years, they started a long process of creating the elusive perfect chocolate formula, bold, balanced and satisfying.
