A joy to use
Had a bit of a job seasoning it but incredible to use, very thick and heavy. First egg stuck but everything since then has cooked beautifully, it takes a bit to heat up and holds it's temperature a long time. I think it's thicker than a lot of carbon steel pans but I'm really enjoying seeing the seasoning developing.My one complaint was a thought it was the model with the bare stainless steel handle but it's got some laminate stuff over the handle so isn't oven safe. I've heard you can just burn the stuff off in the oven but it's fine, I have other stuff that's oven safe.Other than that the cons are, very heavy but I'm ok with that (also a pro depending on you) the handle is a bit uncomfortable and does get hot.Despite it's small flaws it's still a 5* from me because it's so wonderful to cook with.

A different experience
Bought the 22cm diameter pan. It is heavy and you do need to season it, but there is plenty of info on youtube plus de Buyer's own website. I use it for omelettes and it is perfectly non stick for that, if i cook a sausage or bacon before an egg though the egg can stick a little however it is very easy to immediately clean while hot. The pan is brilliant for searing steaks and is infinitely better than aluminium non stick which would be damaged by the high heat needed. I use my pan just for me, if i was cooking for 2, I would definitely go for a bigger size. Love the fact that it will last forever.

Carbon Plus - De Buyer 22cm High Quality pan will last a lifetime
I bought this Carbon Plus - 5100.22 De Buyer steel fry/omelette pan in 2022 for £25.90, now it is £34 in 2024, which is a massive 36% price increase. I thought it was a super-value pan for its high quality. But it is still good value at £34. I wish my salary had gone up 36% in 4 years! Probably, Brexit has caused this increase. As long as you season it, it is just great, will go under the grill or in the oven, and the handle is comfortable and solid metal with a smooth, hammered finish. Pan conducts heat well and evenly. It will last a lifetime and can be handed down. It will go black with use but can be cleaned down to the metal again. Not for the dishwasher. A very useful high-quality French omelette pan. I cook everything in it. It is my favourite pan. Only Mauviel would be better, but at about four times the price.

Well made, substantial pan, good value, will last if treated with reasonable care.
This pan was bought as an alternative to non-stick coated pans with their health concerns over the 'forever chemicals' used in the non-stick coatings applied at the factory.We settled on the 30cm size as being a good all rounder.The pan is well made and very substantial with thick carbon steel for the pan section and a steel handle. The handle has a form of powder coating or similar in gunmetal grey to help prevent it rusting, so the handle does not appear to need oiling. The handle is fixed to the pan with 3 strong rivets and I doubt it will ever come loose. We haven't weighed the pan, but I believe it weighs about 4Kgs. In any event even though it is balanced well, I think tossing food in it will be a two handed job, but for cooking on the hob and in the oven it performs well.Seasoning it is pretty straightforward, taking about 10 to 12 minutes or so and we used grapeseed oil which worked fine. There is a helpful Youtube video on De Buyer's own channel if you search for it and another about the best way to clean it. They are a lot less involved to do than some I have seen.In truth, at this stage it is not as non-stick yet as the purpose built non-stick pans but it's fine and gets better with more use. If you do mess up the coating you have built up, it's no big deal as you can't really harm it (so long as you don't use the dish washer to clean it or put it away wet and not wiped a thin coat of oil over it.) You just remove your existing coating by cooking acidic food like tomatoes and repeat the seasoning again.If you treat this pan with a bit of care I think it will serve you well for many years and get better the more you use it.Finally, this product came via Amazon EU and I was worried about having to pay extra charges and have more delay, but (at least for now) this was not a problem and delivery was as quick and as professional as we have come to expect from Amazon.

The best do-everything skillet one can get.
This skillet became my working horse for almost all occasions and it performs with a grace of a racing stallion. Once I seasoned the skillet, I use it for everything - from eggs and omelets to steaks and even skillet sauces. Perhaps, French omelets or fragile fish require extra attention but possible.

The best pan I ever used but heavy ....
This is the best pan I have ever used and Im sure it will serve me well till I die . It's heavy , very well made , distributes heat evenly and it doesn't warp like others . Its oven and grill save and cleaning it is breeze as long as you do it right after You use it while its still hot which takes seconds and then dry it and apply some oil and store it . I season it on gas burner in my kitchen twice before first use by heating for 15 minutes till you see blue steel effect then let it cool , apply thin layer of avocado oil just to make it shine ( dont put too much oil it will smoke badly ) then heat it for 15 minutes and repeat process and you have great non stick pan as long as you remember to heat oil first for few minutes before putting food on it ....
