Loving my spelt breads. Got into bread making a few months ago. Didn't even know what spelt was. Perfected a delicious honey cinnamon raisin spelt loaf. This is good stuff. Expensive, but for me, everything is.

Makes wonderful bread, pancakes, flat bread, and biscuits. The flavor is fabulous - distinctive without being too strong. I used to use spelt flour frequently treats ago, but hadn't in a long time. It's now my favorite whole grain flour for everyday baking, and I'm now using it in place of whole wheat flour in most things, or sometimes in combination with it.Twenty-five pounds may seem like a lot, but it goes quickly if you bake a lot of bread. I transfer it to a couple large covered buckets and just keep a few pounds in a bin on my counter.Combined with rye flour, this makes the best rye bread I've ever made. I also use it in other whole grain breads, and it seems to make a nicer loaf than when I use straight whole wheat flour, not as heavy, and it doesn't overwhelm the flavor of the other grains.

My family went gluten free. Understand that there is gluten in spelt, but I started using this product because it is organic, and non genetically modified. My son has a sensitivity to most gluten products (most of all regular wheat is genetically modified and has pesticides that most people are allergic to not the actual gluten). I am not a health nut screaming about the evils of regular wheat products, but will say that my son does not have the same issues with this as regular wheat flour, so I use it. Do your own research and make your own decisions. Remember that it is more dense than regular wheat so look up recipes on how to use it properly. We love it.

This is the best spelt company out there. It’s difficult to find white organic spelt in a 25 lb. bag. Product arrived timely and in good condition.

I purchased this spelt flour every other month on subscription because I use it for all my baking needs. I have had fresh flour for years and this one is rancid. I used it for pancakes and it was disgusting due to an old rancid taste and smell. I tried communicating with the seller with no response. This will be last time I purchase this brand. I am so disappointed, what a waste of money.This is follow up to this post. The seller contacted me and was able to do a refund. Dawn was so good to deal with she send a label for the flour to be returned and they will investigate the reason that fresh mill flour is rancid in a short time. Dawn also shared some books on spelt flour and a 5lb bag of flour as a gift. It was good to know that a company still cares about their customers.
