Want to smoke some goat meat in a smoke house would this keep it from going bad while being smoked?

If it’s regular cooking temps then you’re fine; but if you are doing low and slow for many hours; smoking is NOT a sufficient preservation technique on it’s own. The meat spends a significant time in the danger zone (40-140F) and bacteria can proliferate exponentially without sodium nitrite (curing)

Can this work for jerky cure?

It can, but it wouldnt be my first choice. Jerky is typically dried, after being marinated. if dried properly, you will not need the curing salt.
