If your eyeing a new Knife Sharpener..do not hesitate.
I have been using a Lansky sharpener for about a year now. That sharpener brought me into the knife sharpening world and I loved it….BUT I sharpen mostly knives of kitchen size. The Lansky does not excel at that. Its wheelhouse is smaller knives. I could only get mixed results with it. When I started looking into sharpeners the prices blew me away. The price for this sharpener was perfect for me. Let me tell you there is some getting used to it but man what an awesome sharpener it is! I love it. The main reason I love it is that you can adjust it to fit basically any knife because it is fully adjustable. I have sharpened about 6 knives so far and got consistently paper-cutting sharp on every one of the knives the first time. Amazing! The crazy thing is that I only used 2 stones to do it. 220 and 600! Those are the ones that came in the kit I ordered. I sharpened a cleaver and was able to shave arm hair with it. Very sharp. I am going to add to this kit with one more order. I ordered the magnet, 120, and 1000 grit stones. That's all I think you need to have a very powerful Kit.

It's really not hard to use and the results are exceptional
I was cautious about spending so much for a knife sharpener, however I have spend many many hours trying to hone my skills with a wet stone. I simply have been unable to achieve the goal of a consistent sharp edge. Maintaining the angle is most likely my problem.Well I watched the Edge Pro you tube a few times, looked at all the reviews here and plunged in.What I discovered (provided you watch the video and read the short instructions) is that this tool is actually easy to use! I was concerned the left handed operation would be difficult but it isn't (at least not for me).I had 7 quality kitchen knives, everything from a chef's knife to a serrated bread knife to a paring knife. They were not horrible, just not getting good results - nothing would slice a ripe tomato.Using the 200 and 400 stones I was able to do these 7 knives in about 90 minutes. And I was able to slice paper as in the video. And tomatoes are a breeze!It's smaller and lighter tan it looks and the carry bag is perfect.

High quality materials and build quality - a little tricky to use
First, I must say I am very pleased with the build quality of the Edge Pro system and the quality of the materials. I know it's costly, but you are getting what you pay for. This is not cheap plastic, all of the parts work very well and are made to last.I bought Chosera stones for the system and couldn't be happier with that decision. You can buy more advanced systems from Edge Pro with their stones, but all the research I have done lead me to Chosera. I think it was the right call. This package comes with a 220 and 400 grit stone, great for the first step and getting your blade back to straight and ready to take an edge. From there I bought the 1000, 3000, 5000, and 10000 grit Chosera stones. WOW! Every knife I have sharpened so far has come to a mirror edge and is razor sharp. Seriously, like easily shaves arm hair sharp. I have sharpened different metals on various knives (kitchen and pocket knives), all with the same, razor sharp results.The reason for giving the Edge Por only 4 stars is because you have to hold the knife. This system does not have a mechanism that holds the knife for you like others. I am right handed and when I sharpen the left side of the blades, I have to hold the knife handle with my right hand and sharpen with my left. This is a little awkward and slower than doing the other side. Also, this increases the chances for cutting yourself if you slip of drop the knife somehow. I have never done that, but can see how it might happen.Edge pro does sell a magnet that attaches under the system and claims to hold the knife in place. I attached my own magnet, which does hold the knives, but they do move around a little as you move on to large knives. I just don't think that is the best solution, though it does help a lot and allows you to just support the knife a little rather than have to hold it entirely. For the cost of the system, I wish the magnet was just built in rather than an accessory. That of have a mechanism that holds the knife in place while sharpening. That would make this the perfect sharpening system.

Look no further, the Edge Pro is worth the cost, you will get a super fine razor sharp edge on your knives with this system.
Great sharpening system. I believe I have extensive experience using most available sharpening systems and this gives the best results. I have used carborundum and natural stones, diamond sharpeners, "V" type sharpeners, Lansky and similar systems. I have watched a well known Japanese You-Tuber spend hours on water stones and tried those. I have even destroyed a few knives with the worksharp belt driven system. Why didn't I spend the money before and buy the Edge Pro Apex years ago, I could've saved a lot of money and frustration if I'd taken the plunge years ago. I have gotten okay results with my sharpening skills, but I get fantastically sharp edges on my knives with the Edge Pro. If you're considering buying the Edge Pro and are scanning reviews trying to figure out if it is worth the cost it is indeed.

I have at least $1K invested in other so called "sharpeners" and have been unable to put anything close to a factory edge on my knives. I had been relegated to handing them off to a "professional" who would hit them with a belt sharpener to produce a serviceable if not inconsistent edge. I have the coordination of a blind donkey, but within 1 hour was putting factory edges to shame. Check out the videos online like the ones by Nut Fancy. That is exactly how it works. Start with a few stones and then add as you need more. I've added a 1,000 grit (almost mirror polish) and also a 125 grit to re-profile. It's very well made from high quality materials and the stones are very good as well. When I bought it, I had hesitations about spending so much, but all things considered it's actually a bargain.
