It is pine, it is good quality I have two.

Does this come with a hook to hang it?

It comes like the picture. There is a rope that is attached to the top which you can place on your shepherds hook to hang.

Can the plastic panels be removed to make this a fly through style?

Yes, they can be removed. Take the top off and move it to the side and the panels will lift straight up out of the slots that are cut in the wood.
