Q: How to you prepare the duck?

Dump the content of the can in a pot and heat on low for 20 minutes. Higher heat to fry the duck skin if you like it crispy, but beware of over-cooking the duck.Best side is "pommes de terres sarladaises" (Sarlat-style potatoes): slice potatoes (1/8 - 1/6 inches thick) and saute them in a pan in duck fat (you can also use bacon fat) with garlic. Add thinly sliced onions 1/2 way through (or they'll brown too much). Add pepper and salt to taste (warning: the duck confit is usually already rather high in salt).Serve with a side green salad seasoned only with pepper and vinegar. No oil, there;s already plenty fat in the rest of the dish. ;)
