Stabilize your home baked cakes and bread. A even rise every time / longer shelf life . I purchased this product so I could try it before ordering a large bucket from our bakery purveyor. I heard nothing but positive things about it. I was having a difficult time getting our cakes to have an even rise in the convection ovens in our new bakery. After we purchased this product and started using it in our cakes and bread not only did we get an even rise every time, we noticed that our crumb in our cakes and our breads were much lighter. Also, the shelflife was the extended by 3 to 4 days. Eating a cake on the fifth day and it still being fresh is basically unheard of. Well, that will not be the case using this product. The first cake I baked with it I took it on vacation. We didn’t eat that cake until the fifth day of vacation . It was a absolute delight. Still fresh it traveled very well. I placed it in the back of my car for 200 miles. I was afraid a birthday cake would not have made it, I was wrong t it was perfect. My granddaughter wanted a cake made from my bakery. So it was important to me and her that the cake made the trip.

Take it from a Baker...it WORKS!!!
I'm a baker of over 20 years and I've been using King Arthur cake enhancer for a year or two now and there is DEFINITELY a difference!! Compared to my previous cakes, this makes my cakes more soft and moist and they stay fresh for a longer time. I've also notice that my cupcakes rise a bit more when I use the enhancer for my batter. Now strangely enough, I didn't like it as much in my dough (cinnamon buns), it seems to do the opposite and they came out more dense, but I may try again later. ***A small tip for those who haven't tried it and for those who have and don't care for it...don't use it the same as on the container (it says 1 - 2 tbsp per 1 cup of flour) In my opinion it's too much, you don't need so much to get a good texture in your cakes. For my typical basic, yellow cake batter, I use 3 cups of cake flour, so I add NO more than 1 1/2 tbsp to my sugar and I cream it along with my butter. Works wonderfully...and a second tip for those who love using this enhancer...go and purchase it directly from the King Arthur website...it's far less than buying it on Amazon.

I never bake a cake w/o this stuff! My cakes are moist and last longer than if I don't use it

Makes your baking become almost professional. Any time your recipe calls for flour this additive makes it so light and airy.Great product to have on hand if you bake. Great quality.

Unable to use or return
I was very excited to start working with bread conditioners and enhancers after reading about them online when I decided to buy some on Amazon. I had researched uses and ingredients and felt confident that this would be a good addition to my bread and cake making experience only to find out that the highly recommended King Arthur brand is mainly rice starch- which is something I’m allergic to. This made using the product I bought impossible. I was willing to pay the higher Amazon price as I had not had success finding conditioner/ enhancer at my local grocery stores only to buy the one that came in a smaller quantity and just happened to be made out of something I’m allergic to. Dough conditioner should made up of enzymes, yeast nutrients, minerals, emulsifiers and various other thing… so where does rice come into play?Regardless…The disappointing part being that when I went to return the newly delivered item I found out that it can not be returned or even refunded.It was a total waste of money.

Amazing but now very expensive
This item makes cakes very moist, keeps them that way, and prevents them from becoming stale and dry. Love it!This has now become crazy expensive and I won’t buy it anymore.
