Because whole wheat has more fiber, it fills you up faster and for longer. It may also help digestion. You could research the benefits of whole wheat in general. As for using orzo, I find it easy/fast to cook and wonderful in pilafs and stir fries.

It is not gluten free but it is whole wheat and that is the reason I bought it. Whole wheat pasta is hard to find
