Authentic and good
This is my go-to soy sauce for sushi and all Japanese dishes. The depth of flavor from aging in oak barrels is obvious, as is the nuances in the flavors, compared to the sauce aged in stainless steel.I always have a bottle in reserve.

I've become a major fan
A few years ago, a food blog evaluated soy sauce brands and put this one on top. The usual Kikkoman is fine, it suggested -- but this is better. I gave it a try, and... well, now Amazon reminds me that I've purchased this product four times already. That says something; it's not like I go through soy sauce that fast.I suppose I should say something about its saltness or umami or whatever, but I'm not in the mood for that kind of analysis. Simply, I prefer the taste to the standard brands.Shipping has never been a problem for me. It's always arrived well-packed, with bubble wrap around the bottle. As artisanal products go, this is affordable. It's worth the experiment!

I like this product so much I am spending the time to review it.
I have a huge sensitivity to preservatives that cause excruciating pain in my joints along with voluntary muscle movement so I quit using soy sauce or anything from a bottle that I haven’t made myself. This product came across in my email from Amazon so I almost deleted it due to food sensitivities but I looked at the ingredients and realized it is really a no preservative product.I did order it despite the price because I thought it would be worth the money to have soy sauce back in my life.Delivery had a few hiccups but I was not disappointed when the product arrived. I had been using a product that claimed no preservatives but every time I used it I would be woken up with severe joint pain and voluntary muscle movements so I threw them out and was so doubtful to try this soy sauce. I did try a tiny taste before going to bed and slept through the night. The next evening I prepared broccoli beef and was doubtful about being able to sleep through the night. I was so pleasantly surprised to wake up the next morning with no symptoms through the night.I am so pleased with the taste of the soy sauce. It has a depth of flavor that I haven’t tasted since I was a child. It has a robust flavor packed with deliciousness that delivers more seasoning per drop so I was able to use less product then the products I use in the past.

This soy sauce is not salty
As a person from Japan, I use soy sauce a lot. I’ve tried some different brands but so far this is the best one for me. A lot of soy sauce you can purchase at a supermarket are just salty but this one, you can taste soy sauce. This is a little bit pricier than others, but it worth it. Go get some sushi from a restaurant and use this one instead of the little packets you get from restaurant. You’ll know the difference.

Finest Shoyu Soy Sauce 2 Years aged.
A little goes a long way (seriously).I tried other "organic" 2 year aged Shoyu... wasn't too pleased. This "Kishibori" Shoyu however is phenomenal. It has the magic flavors which makes the dishes taste better than the restaurants. I can't enjoy the restaurant's fired rice as much as the fried rice I make at home, I am not overstating here.I use this Shoyu soy sauce specifically and only for cooking fried rice. I only use a little amount probably 1 tablespoon at max for an entre fried rice dish. I experimented many different premium aged soy sauces, it seems that it's best to only use about 1 tablespoon. If you use more than 1 tablespoon the dish will taste unpleasant and somewhat a bitter flavor.I apply the Shoyu soy sauce during the last stage of the cooking process, after the veggies, proteins, onions, egg and rice has been mixed and fried, it is then the best time to apply the soy sauce and quickly mix everything at medium high heat. Once mixed for about a minute, quickly serve it on the plate, you do not want the soy sauce to continue to cook it will change it's flavor characteristics.Good stuff.

Excellent Japanese Barrel Aged Soy Sauce! Umami!
Excellent flavor, exceptionally smooth, not overly salty, pleasing "thickness" to the sauce. I used it for homemade tuna and salmon rolls and sashimi for dipping, it's just on another level of flavor compared to steel vat aged soy sauces. Too precious to cook with so I'll only be using it to dip succulent sliced sashimi and rolls! 100% recommended for a barrel aged soy sauce!Update 10/24 My 6th bottle! The price has dropped from $12.99 to $10.99 which is nice since I tend to use it for everything instead of just dipping! I like to take this soy sauce and mix it with with some tubed wasabi then marinate thinly sliced tuna and salmon for about 30 minutes, yummy
