Fine gluten flour, great for making seitan
I used this to make seitan "meatballs" , adding stock, soy sauce, sun-dried tomatoes, ground walnuts, mushrooms, herbs and spices. The resulting dough was divided into balls/croquettes which were steamed for 25 minutes and then ready to cook off - lightly fry for a few minutes each side The result was delicious and the mixture freezes well (after steaming and before cooking off), so good for batch cooking. Very happy with this product which is a fine gluten flour that mixes well. I haven't used it for baking so can't comment on that.

Works well when making paste !!
The product was purchased to mix with any fishmeal groundbait for making paste, it makes the paste stringy, hence staying on the hook longer, amounts of each is trial and error, but it does work

Cheap flour for making seitan
Great way to make your own vegan protein that is so much cheaper than buying shop bought. Can use it to customise as well.
