Whta's the significance of the different colors of tallits? I've heard pink is Esther, Blue is Joseph, etc. Which to buy?

Is the fabric of the Tallit Wool? Cotton? The description doesn't say.

Hello! It appears to be a blend. I would say cotton and polyester. There is a tag on the shawl but it is in Hebrew! It is a beautiful shawl though!

Why are there different sizes and how do I choose a size?

Well the Tallit is meant to be worn as a covering in prayer... A lot of people wear them as shawls and some wear them on their heads when they pray. So that’s why they have different sizes it’s too your preference in how you wear it.
