Not chewy when rehydrated!
This is a nice mix of dried veggies. I used them to make little quiche to freeze for my family for breakfast. I was looking for something which wouldn't be too chewy and these worked great. I did soak in hot water and drain before I used them, and they turned out perfect with a soft texture. The picture is straight out of the oven. This batch of quiche do have dried mushrooms (prepared the same way) and sun-dried tomatoes as wall, for context, since these dried veggies are chopped finer than I chopped the mushrooms and tomatoes (bc I was in a hurry).

good sized bag of a variety of tasty veggies, must have pantry item, use in everything
This bag of dehydrated vegetables contains: Carrots, Potatoes, Celery, Onion, Bell Peppers, Tomatoes, Cabbage. It is a pretty good mix. I rely on dehydrated vegetables for use in quick soups (I'll make a mug of broth and add leftover whatever from my fridge, and add a spoonful of dehydrated veggies), boost up egg dishes, and longer simmering soups. Really a must have for any prepper, or anyone who wants to round out their pantry. Makes nice addition to meal prepping, particularly shelf stable stuff (think of camping meals, emergency meals that just require water, etc). Good way to get some vegetables if getting to the store is out of the question, or produce is low, or way too pricey. This is a good mix, at a good price. I will likely buy it again. However, it is worth buying a few different brands to get the various varieties of vegetables. I like the inclusion of cabbage in this mix, where as my usual brand does not. So I am learning to take look at actual ingredients, then keeping a 2-3 brands on hand to choose from. I find that they stay "fresh" because there is really nothing to go bad. But when I have excess and have room in my spare fridge, then I will just store it in there. But any air tight container in a cool dark place should be more than adequate for a food item like this.Frontier Co-op dehydrated soup vegetables which has Peas, Carrots, Potatoes, Green Beans, Onion, Bell Peppers, Parsley, Tomatoes, Celery Flakes

I like the taste, portability and wide range of uses
These dried veggies are great. I do agree with others that its a bit heavy on the carrots. I wish it had more of the greens and less carrots, but its still very good.I mainly use these in my soups and when I go camping. I've taken these on backpacking trips as well.I find the vegetable don't cook as fast as my noodle so, I cook these for a few minutes prior to adding to my noodle soups. For regular soups I just add them in the beginning and its fine.I like the quality, but will be looking for one with less carrots in the future, hopefully from the same company because these are made well.

No green herb dust!
I've tried a few different brands recently and this is by far the best. Great size and flavor of the veggies and it is devoid of that pesky powdery herb dust so many of the other brands contain. It's pleasingly colorful too. I don't feel the need to try any other brands.

Great Freeze Dried Vegetable Mix!!
I absolutely LOVE these. Great for soups, rice, stews, eggs, pasta, chili, whatever you want to add diced vegetables to. Saves shopping and prep time, fridge or freezer space, and MONEY versus buying (and throwing out) fresh vegetables bought to cook anyway. I used to throw out money on leftover, wilted tomatoes, celery, carrots and peppers pretty often, not anymore. And not at what produce costs. Especially now, in February 2025. I have never seen prices for produce like this in my life, so buying a couple of bags of these are a savings account in itself. They are also great for emergency preparedness and camping/backpacking, anywhere space, longevity and weight might be an issue.I've attached photos of the dried & rehydrated product, out of a freshly opened bag. If you don't like carrots, don't buy these. Personally I like the ratio of carrots, onions, celery, tomatoes, cabbage and bell peppers in this blend... it's a very healthy, delicious mix. Having these I find I eat a LOT more vegetables than I used to, almost daily now because I don't have to prep them. One of the best things is that this mixture does NOT have potatoes as a cheap filler ingredient! I don't want potatoes in my rice, chili or pasta or every time I want to add vegetables to a dish. I saw a complaint that they don't instantly rehydrate upon contact with boiling water? It says right on the package to either simmer for 10-15 minutes or soak in cold water until reconstituted. They are not "Instant Cup-A-Soup". If you need them any faster you can always fully or partially rehydrate some and freeze them. Bottom line is that anyone who wants tasty diced vegetables prepped and ready to eat in 10-15 minutes will LOVE these.

Dehydrated vegetables
Great quality. Can be used in many recipes I used mine in ramen noodles and shelf stable jars. Great value for the money will be purchasing again in the future.

Just average
These are just OK. Price wise, they are one of the best deals out there, but taste wise there is not much flavor of the dried vegetables. Also they remain hard even after your noodles have turned soft and are ready to eat. It was fun to try it out, but I probably will not be purchasing this brand again.
