Can this be bumped up to dealing with 80v? could I simply change the capacitor, or is 60 limited by the chip?

Dose this work on a electric scooter?

Is there a data sheet for the whole board, i need to know how it works and it building blocks. A deep review of the chips like JY01 and its mosfets.

Does the pot have to be turned to zero before the brake is activated? Or will toggling the brake disable the drive? Can brake act as on/off switch?
