5/5, would cook like a viking again.
I've gotta use flour with a lower glycemic index, and this fits the bill! I'll keep yall in the loop after my next bloodwork lol. Taste and texture is great. It's grittier than all-purpose flour (as expected), and I personally really like the more well rounded flavor. We've made cakes, cookies, breads, and so on with this stuff, and it turns out great. My lady and I would just be using it 1 to 1 with other flour types. It turns out a little different, but the result has always been wonderful.

Good product
This is my third time ordering this product. It's finely milled and mixes in easily. My first and third bags arrived in excellent condition. The second had a knife slut in the bag, and some of my flour was lost.

Not a flour substitute
Can be added to regular flour for improvement of protein content.

Soft and sifted
Incredibly soft and well sifted. Great for thickening soups and frying, and mixed into bread dough. Note: this isn't *whole* floor. It's definitely been sifted. But I don't believe it's mixed, as other reviews speculated.

It's not just that there's no nutritional information on the packaging or the item description. It's that I wrote to SpicyWorld and the response they gave me is very suspicious. I'm left wondering if it's even barley at all. What I wanted to know was whether it was made with pearled or whole-grain barley. I've had bad experiences in the past of people just telling me 'oh, sure, of course it's whole grain!' without actually checking, so I also asked for the nutritional value, because I felt like I could compare the numbers with other products and see if the fiber content was similar. The nutritional info they gave me used a serving size of 3 tablespoons (28g). Most whole-grain barley flour provides about 2.8 g of fiber for that amount of flour. SpicyWorld claims theirs has 5g. It isn't just doubled, because the protein content (3g) is what would be expected for 28g. Also, the ingredient list is 'Barley flour, wheat.' My best guess is that either this is barley flour cut with a LOT of wheat bran - which, honestly, I don't think is possible because it bakes up nice and soft and it rises just fine - or the nutritional information they gave me belongs to some other product entirely. I could be wrong, but...I don't think I am. I'm probably going to put it in the back of the cupboard (because I hate throwing food away) and buy some barley flour from a more reliable source, even if it does cost a bit more. This product has a mild but pleasant flavor. If all you want is a healthy flour with a bit more flavor (but somewhat more crumbly texture) than all purpose flour but not as strong as whole wheat, it might be a fine choice. I made a couple perfectly nice loaves with it, before checking the info. If you want to know for sure what you're getting, avoid avoid avoid.
