These are hand-picked, cleaned in pure water, sun-dried, hand-pitted, graded for size, and classed based on common defects. They are bright orange coloured. They last for a long time. It was discovered in the Ottoman, Persian, and Russian empires before the twentieth century, but Turkey is now the leading producer. Dried apricots from the Mediterranean or Turkey are normally dried whole before pitted.
