We have a pretty well-equipped kitchen. Imagine my shock, surprise....yes, even dismay....that we didn't have a thin carving knife for one of the nicest bone-in prime ribs my Bride ever prepared. I muddled through the best I could and researched and ordered this knife.So glad I did.We had more prime rib than diners for our Three Kings Day feast and had a healthy amount of uncarved roast beef left over. The knife came in and my Bride and I decided it would be a great test of this blade to slice the beef thin to make some roast beef au jus on kemmelweck buns. The blade cut beautifully, giving me thin slices with ease....and I didn't even have to sharpen the blade!The handle is wood and provides a comfortable grip - and I have pretty big hands. The blade is thin and flexible but not too flexible. It is made of a nitrum stainless steel; this seems to be a nitrogen based steel that is touted as being harder, more durable, and takes a edge that holds it's sharpness longer than a standard stainless steel blade. I haven't been able to put the durability of the edge to the test yet - I've only used it once - but the edge was sharp and cut through the beef with ease. I was able to cut suprisingly thin slices with the blade.I can't wait to have another chance to put this knife to work; it seems to be a solid, high-quality carving knife for a very reasonable price.
