Would these be ok for a 1 year old ?

They're very thick, so great for small, undeveloped hands. If the 1 year old is like my 2 year olds, the only issue is that the crayons will go in the mouth; I like that these are non-toxic for that reason!

Do these break easily?

No they are quite thick, you have to put serious effort to break them.

What are the dates made out of? Dyed with red 40 or other artificial dyes?

Under the “Details” section, it says they don’t use petro-chemicals to make nor dye the crayons. Therefore, red dye 40 is excluded since it’s petroleum based.
