Q: how do you seal the bags? Can they be heat sealed?

They seal like a basic ziplock bag. So they are super leak proof I just freeze at upright angle. I’m sure they can be heat sealed but never tried

As a rough guess about 3 1/2 oz.

The same as the store ones. But I don't care to much for these bags, and the funnel is crappy, also when you go to eat them you have to cut the edges or they are very hard and sharp on the mouth. Good luck!
