it's not perfect fit. because a7's lens is big. s5 is better.

Yes. It's works with my Fuji xt1 with is similar in size

Q: will this work for the Canon EOS M...with it's touchscreen?

It should fit the Canon EOS M. I have a Samsung NX 300 and it fits with plenty of room and the touch screen work too, but it is not sensitive to touch.
