Great Quality
I bought this as a gift for someone. I own and like Mac knives for their quality and maintenance. This knife was purchased for cutting large items like rib roasts, turkey breasts, and any meat or fish that requires a long cutting stroke. The blade is strong and resists bending and flexing. Although not the best in keeping its edge, it does sharpen well. My recommendaton is take this knife, for that matter all your knives, to a professional sharpener and have edges re-worked professionally. If you are a do it yourself type, I hope you are using a consistent and excellent sharpening system like Spydex. The factory out of the box edge is good, but not the greatest. Afterall, the manufacture is trying to get the product out to retail quickly. Back to the review, this Mac knife needs a professtionally sharp edge put on it. Once done, it will amaze you how sharp this knife will be. It has good balance, but understand that this is a very solid blade and it is on the heavy side. It doesn't flex sideways much, very solid. I do not recommend this knife to chop things, use a butcher knife for that. Great knife.

If you want the best... This is it!
This knife is so sharp.... after I washed it, for the first time, I looked in the sink and found thin slices of the blue sponge I'd used to carefully wipe the blade. MAC knives have a reputation for being the best when it comes to sharpness, maintence, and feel. My first MAC knife was given to me as a wedding present over 40 years ago. I still use it almost daily. In those 40 years the only maintenance has been to sharpen it on the backside of a dinner plate. Yes, they cost more... They are worth it!

Edge is Sharp
Edge is Sharpest I've ever had in the long term. However the cutting edge is so fine it develops pinhead rust spots when you leave it in an edge guard overnight in a humid climate. The steel is so brittle it can break when you cut hard squash. I'm a kitchen professional and didn't read the directions (Duh)and broke the knife tip cutting a calabash. This knife is high maintenance. I dry mine constantly during use.Overall I love this knife so much I bought a second one for my chef wife

Great knife for the money!!!
I am a professional cook and I use this knife every shift at work and I love it. It was scary sharp when I first got it and has held an edge very well with proper care and maintainance. It is also easy to restore the edge back to a very sharp status when using the proper technique and equipment. It is very light and maneuverable and I would highly recommend it. All my fellow cooks admire it and always ask to borrow it; I would highly recommend this as great starter knife or a workhorse for everyday work. It is lighter than German knives, so in this instance it is not so much geared for hacking through bones or other things like that, but it is great for fine knife work and can go pretty heavy when needed.

Know what your buying.
I am a chef and work with this knife daily it is a great product and holds it's edge well. Sharpening is quick and easy however be warned the knife rusted VERY easily this knife must be hand dried AND oil after every use and wash.

A Razor's Tale .
I've been using Macs for a long time so I knew what to expect , that is , pure excellence .( this from an owner of many high end Japanese knives ,)However , this one was a gift for the manager ( anonymous ) of the best kosher style deli in Montreal . It didn't occur to me that ihe would consider it too good to use it at work so he took it along with the accompanying black ceramic honing rod home . ' Nuff said ?Makes me wonder what Mr . & Mrs. Angelil will think of this ??

Knife
It's light weight, the blade holds a nice sharp edge. The only thing I don't like that leaves spots after I clean it

Excellent
This knife is the sharpest out-of-box product I've experienced. It also stays sharp in a high-volume working environment. I don't think it's made to contact bones. I haven't tried because I don't want to compromise the edge. Other knives I've used at the sushi bar need sharpening after one or two days. This knife stayed sharp for three weeks.
